I worked in an organziation where the practice of providing an acting allowance was fairly common. Generally the adjustment was around 5% increase above and beyond their current wage.The one comment I have about pitfalls is thati f the employee in the acting position then applies for and is given the job, the salary negotiations can be a bit sticky. Generally, they've realized by tehn that 5% isn't going to cut it and will try to renegotiate at that point. Other than this, it is really good to reward your employees for taking on more responsibility.

We offer temporary promotions for employees that are taking on responsiblities for co-workers and managers depending on the responsiblities that they are undertaking. Depending on the duties, the employee can receive a 5% increase or a 10% increase. The increases correspond with our promotion policy. Employees cannot be on temporary promotion for longer than 6 months.
