Piece Rates for Hourly Employees

What is the best way to apply piece rate pay to an existing hourly employee? This compensation is intended to be for work done after the regular eight-hour shift and I'm not sure that OT would not apply. The manager would like it set up so that the employee works 8 hours, then clocks out and receives pay for each piece completed. Can we do this?

Will paying your employees this way raise any minimum wage issues if, for example, an employee has a slow day? I would also check state law for applicable wage payment provisions, particularly if your industry is one that is subject to a specific regulatory scheme. Checking with the DOL (or your State DOL) may be helpful.
