I have worked for the same TX company for 8 1/2 yrs. I told them 2 1/2 months ago that I was going to begin looking for another job. I have not found a job nor did I give them any type of deadline to do so. They have already filled my position and now told me that they will let me go at the first of next month. They gave me a "retention bonus" of $2500 to stay through that day and train my replacement. In that document they are still treating this as a resignation, but I see it as being fired. My question is that and if I sign the document will I be eligible for unemployment in the state of TX?

I would suggest you ask that question of the UI people in Texas and every state is different. Further, circumstances not exactly in evidence right now could have a profound impact on your cause.

I am in Texas and I agree that small details can make a difference. You might google "Texas Unemployment Appeals Manual" and read about cases where employees gave notices over 2 weeks. It is my understanding that you might be in luck if they accepted it much earlier.
That said, I am not sure I would have given them more than 2 weeks. I know employees think it is being loyal, nice, etc. but most employers don't want an employee who doesn't want to be there. Usually productivity majorly drops when the employee knows they are leaving soon.
