I am looking for any data on best practices with regards to organizing shared services to support volume recruiting. More specifically recruiter to sourcer ratio and coordinator support ratios as well

We normally look at recruiter to openings ratio. Depending on the type of positions I have seen this ratio vary between 1/10 and 1/20.

Staff support ratios are often 1/5 to 1/10 again depending on types of positions and what duties the staff person is responsible for. If there is a lot of candidate travel involved then the ratio will be lower.

Does this example of volume represent hourly or exempt job openings? Diverse or one job type?
