It sounds like you have a good, thorough process, and I wouldn't shortcut it. You could shorten the time it takes by emailing documents rather than overnighting them (as someone else suggested). Also, you could start reference checks and past employment verification when you've scheduled your "second round" interviews, rather than waiting till you have chosen the final candidate and he/she has accepted your offer. Those references and employment verifications may also help you choose your final candidate.
