I'm not sure of what exactly you will be teaching in your class, but have you covered both verbal and non-verbal communication? In the coaching class I teach, we cover these topics, and then our role plays give instructions on what to say and how to act. For instance, one role play has the supervisor talking to his/her direct reports about a new program the company is rolling out, that they don't really support. They are instructed to act nervous and say things like "don't shoot the messenger" so people will see how the non-verbals affect the message.
As another scenario idea, you may also want to include a positive role play, like praising an employee for a job well done.

I use the videotape "The Practical Coach" as part of our supervisor class. It has several good examples (as well as a framework for both positive and negative behavior coaching techniques). In fact both issues you mentioned are on the video. Then I have partners pair up to use the step-by-step approach with each other on some of their real-life employee issues. Everyone feels safe since it's not in front of anyone, and everyone gets a chance to practice real situations. Then we discuss what worked, what was hard, how can they take what they've learned back to their worksite immediately.

Have you thought about something positive to coach - ie use a blind fold and let the members guide one other member about the park or garden area by taking their arm or hand and talking to them so that they run the course safetly. This will build trust and understanding which will make the team more aware of each others needs, strengths and weaknesses and so become mroe cohesive and able to accept each others critical appraisals and guidance.

J-
I don't have many hard and fast rules about training, but here's one of them: I NEVER use role playing in any class - unless the subject is 'Learn How To Conduct Role Playing'.
I have never had any positive experiences with role playing. The embarassment of the participants far outweighs any benefit. I do, however, differentiate between role playing and practice scenarios, which I have found to be valuable tools when training subjects such as customer service skills.
Good Luck!
