Are there any laws in California that requires employers to give certain number days off in a week/month. can we schedule employee to work 7 days a week continuosly for two pay periods (both part time and full time). Any guidance would be appreciated.

I am not aware of such a requirement, but be mindful of the overtime requirements for non-exempt employees. The California Industrial Welfare Commission has a Wage Order for each industry that addresses overtime on the 7th consecutive day.

I also found this language in the IWC Order for our industry, manufacturing. (F) The provisions of Labor Code Sections 551 and 552 regarding one (1) dayâs rest in seven (7) shall not be construed to
prevent an accumulation of days of rest when the nature of the employment reasonably requires the employee to work seven (7)
or more consecutive days; provided, however, that in each calendar month, the employee shall receive the equivalent of one (1)
dayâs rest in seven (7).
You should be able to find the Wage Order for your industry on the internet. I hope this helps.
