If an exempt EE has exhausted all PTO time, do you dock their salary for continued absences? (NY Employer)

As long as the reason for the absence is one of the usual reasons that employees take PTO then yes. That is why you have a PTO bank.
Why is the employee out?

Yes, but I believe it has to be deducted in full day increments.

hrzt is correct. Only absences under FMLA may be deducted for a partial day
|
