Global Recruiting and Applicant Data Archiving

I'm looking for feedback or a case study on a successful approach to the challenge of global data privacy for companies that are tracking all applicant data in one global applicant database, and are required to purge/archive that data when requested on an individual applicant basis as well as in batch per in-country rules/laws (companies required to only store German applicant data for 6 months, for example.)

I work on HR Technology, too, so as much background on the technical solution implemented would be fantastic! But as much detail on the business strategy/process would be helpful as well.
