I don't have a specific book to recommend, but you might try searching for anything related to "behavioral interviewing." This technique involves having the applicant answer questions that ask for him/her to describe "situations" in the past where they performed particularly well/not so well. We find this approach yields the best results - past practice usually predicts future performance.
